Open date revealed for Glynn Purnell’s new restaurant – and there’s an exciting surprise

A new restaurant by Michelin-starred chef Glynn Purnell and Loki Wines boss Phil Innes is to open on Wednesday, December 10.

Trillium will begin serving up its ‘bold, seasonal cuisine’ and carefully-curated wine list before Christmas on Snow Hill Queensway near Colmore Row, where North Brewery was.

As well as revealing an open date, Trillium has announced an exciting surprise for West Midlands foodies too.

Esteemed chef Rob Palmer, of former Michelin Star restaurant Peel’s at Hampton Manor, has been revealed as Trillium’s head chef with British Chefs Federation Young Chef of the Year 2024 finalist Andrew Kay taking the sous chef role.

Rob Palmer’s time at Toffs in Solihull was celebrated by foodies and critics alike before his stint as executive chef at Ansty Hall in Coventry.

Trillium promises to be a ‘fresh take on fine dining’, with an ethos of being ‘relaxed, unforgettable, and deeply satisfying in every way’.

Glynn Purnell said: “At Trillium, choice is at the heart of the experience.

“We want our guests to enjoy the menu however they like. Whether that’s a traditional three-course meal or a personalised selection of sharing plates.

“It’s all about dining on your own terms, having as much or as little as you like, spending what you want, with no rules.”

Options will include small and large plates and the menu will be ‘ever-evolving’ and centred around shared dining.

Glynn added: “I’ve assembled a team with experience in some of the region’s finest kitchens- a group of highly trained, passionate professionals.

“Our primary goal is to deliver exceptional, high-quality food, crafted from the very best local ingredients.”

Phil Innes said that the wine list ‘will hold as much significance as the food’, with a regularly rotating offer featuring ‘hidden gems and natural producers’ as well as renowned classics.

Phi, said: “It’s not about status: it’s about a dynamic, changing selection that highlights lesser-known wines and unexpected discoveries.

“Today’s diners value choice, and there will always be something to surprise and delight, including our own exclusive signature wine, a unique blend I’ve created personally for the restaurant.”

The restaurant’s interior has yet to be revealed though CGI graphics show woodland-inspired dappled lighting, hand-painted finishes and etched glass that is ‘inspired by folklore and the rhythms of nature’.

It will also have an outdoor terrace near Colmore Row.

Reservations are now open. Trillium will be at 1 Snow Hill Queensway, B4 6GH.
