Iconic ’90s steakhouse is revamping its final restaurants. Could Oregon be next?

A once-sprawling steakhouse chain that now only operates in six states — including Oregon — is planning a salad-bar-studded makeover.

It’s been quite some time since Sizzler’s heyday. The 67-year-old restaurant chain once boasted more than 600 locations nationwide — though that number has dwindled to double digits since its 1990s prime. In 2020, while reeling from the COVID-19 pandemic, Sizzler filed for Chapter 11 bankruptcy for the second time. It had previously filed in 1996.
Sizzler now operates less than 80 locations in the United States and Puerto Rico. There are locations in Arizona, California, Idaho, New Mexico, Utah and Oregon.
Now two years out of bankruptcy, the iconic steakhouse chain is plotting a comeback.
That plan revolves around a makeover, Sizzler told QSR Magazine last month — one that brings the chain back to its swanky, fast-casual roots.
Tiles floors, wood accents, new paint and a fireplace near the front counter area all part of the revamp, along with more modern touches, like digital menu boards and expanded four-seat booths. Sizzler’s trademark all-you-can-eat salad bars will get a new look, too, swapping stainless steel for bright white surfaces.
Since 2023, Sizzler has renovated nine of its existing locations, with plans to expand to other existing locations. The company did not respond to an email asking whether an Oregon restaurant may be on the docket for future revamps.
There are four Sizzler locations in Oregon — in Albany, Grants Pass, Roseburg and Springfield.
The chain also plans to bring back its “The Sizzler” meal, according to QSR — a steak atop a bed of thick-cut fries and caramelized onions, topped with a garlic sauce and served on a sizzling hot platter.
