Quay, the pinnacle of Australian fine dining, to close in February

After a quarter-century at the pinnacle of Australian fine dining, the country’s most awarded restaurant, Quay, will close its doors in February, six months short of its 25th anniversary.
In a move that says everything about fine dining’s fortunes post-pandemic, Quay’s owner, Fink Group, will shutter the legendary establishment, which has maintained three hats for an unprecedented 23 years under executive chef Peter Gilmore, but struggled to turn a profit in recent years.
